Sis Liselle's Christmas Cupcakes recipe

On the Christmas eve, sis Liselle brought her home-made Christmas cupcakes to visit her friend : bro piglet.

Piglet likes the cupcake and asked sis Liselle for the recipe.


This is Liselle's first trial, so she bought a box of cake mix ( 375g = 20 standard size cupcakes) . Other ingredients are : 2 eggs, 60ml of vegetable oil, 250ml of milk.


Blueberries are optional. It goes well with chocolate cake.


Liselle : " First, we beat the eggs. "


" Use low speed and beat the eggs until fluffy "


While waiting for the eggs, Liselle adds blueberries into the cupcakes.


The egg mixture is fluffy and creamy now.


Add milk and the cake mixture into the mixing bowl.


Pour in the vegetable oil.


" Beat on low speed for 30 seconds to combine. Increase the speed to medium and mix for another 3 minutes "


" After that, fill the cupcake liners to 2/3 full with the batter. "


" Bake for 20 - 25 minutes. "


"Wait a minute! Always remember to preheat the oven! I preheated the oven over 160°C for 10 minutes."


" Hooray, the cupcakes are ready! But we have to wait for the cupcake to cool thoroughly before we put on the frosting"


" Now, sis Liselle wants to make Vanilla Cream Cheese Frosting as the cupcake's topping."


You will need : 60g butter, at room temperature;
200g cream cheese, at room temperature;
1 teaspoon vanilla extract;
1/2 cups of icing sugar
1 to 4 Tablespoons heavy whipping cream
some cakes decoratings


" Before that, prepare a plastic bag and cut a corner to put the nozzle inside. "


" Ok, first we put the butter in the mixing bowl and stir it gently until it melts."


" Add in the cream cheese and blend until it is well combined. "


" Add in vanilla extract and powdered sugar. "


" Blend on low speed until combined. Increase to medium speed and beat until it begins to get fluffy."


" Last step, slowly add in the heavy cream, little bit at a time"


" Now, use your creativity to design the cupcakes with the frosting."


Liselle having a super fun time decorating the cupcakes.


Keep the cupcakes refrigerated. Serve chilled.


Shhhh ..... bro piglet had too much cupcakes just now and is taking a nap ...
